Strawberry cheesecake cup

This one is a request form my sister. She wanted to make cheese cake but turn it into a cup for easy serving.



Well, it's easy to make cheese cake, especially the rare one in the cup because you don't need to bake it. You can use any kinds of glass that you like but for me small one is great. This time I use Hobnob (oat biscuit) for the base, because my sister love it, but if you like digestive biscuit you can substitute it too.
The topping is simple boil strawberry, no gelatin added, soft and sweet ^^. I choose this one becaus eI want a pure flavor of the fruit, actually you can use any kinds of berry, taste it and add enough sweetener to make it delicious.

Strawberry cheese cake cup
Makes 6

Base
60g .................................. Hobnobs biscuits, crushed
35g .................................. Melted butter

Filling

125g ................................. Cream cheese
1 ....................................... Egg, separated
125ml ............................... Whipping cream
30ml ................................ Sweetened condensed milk
4g ..................................... Gelatin sheets
26g ................................... Icing sugar

Topping

170g .................................. Strawberry, cut into pieces
25g .................................... Granulated sugar



Mix the hobnob and melted butter together, divide them in to the cups. Refrigerate until ready to use.
Bloom the gelatin in cold water for 5 minutes.
Put the whipping cream into a microwaveable cup, and heat in the microwave until almost boil (about 40seconds -1 minute).
Put the softened gelatin into the whipping cream, stir until melt.
Beat the cream cheese with icing sugar until combine and smooth, add the egg yolk, beat to combine, follow by the whipping cream mixture and condensed milk.
Whip the egg white until soft peak formed, then fold into the cream cheese mixture.
Pour into the cups. Refrigerate for 2 hours before adding the topping.

Put the strawberry and sugar into a microwaveable bowl, cover with plastic warp and heat in the microwave for 1-2 minutes or until very soft.
Let the mixture cool completely before putting it in the cup over the cream cheese.
